| Cooking with
Fresh California Sweet Potatoes |
Fresh California Sweet Potatoes are one of
the most versatile vegetables grown. The delicious,
nutritious sweet potato can be baked, boiled,
steamed, fried broiled, micro waved and frozen.
Whenever possible, cook sweet potatoes in
their jackets as many of the natural sugars
are found just under the skin. |

| To
Boil: Cook unpeeled sweet potatoes,
covered in small amount of boiling salted
water for 20 to 30 minutes or until desired
doneness. For use in salads where cubed or
sliced, cook until just barely tender. |

| To
Steam: Slice sweet potatoes 1/4-inch
thick. Steamed about 6 to 10 minutes or until
soft. |

| To
Bake: Place whole potatoes in 350
degree oven and bake 45 to 50 minutes or until
tender. |

| To
Fry: Boil for 10 minutes. Peel,
if desired, and cut into strips. Heat oil
to 365 degrees; cook until golden. Drain on
paper towels. Sprinkle with you favorite seasonings. |

| To
Pan Roast: Halve, quarter or slice
potatoes. Arrange in baking pan. Season. Drizzle
slightly with vegetable oil. Roast for 45
minutes to 1 hour or until done. |

| To
Freeze: Cook using any method.
Dip cooled potato sliced in lemon juice and
water. For mashed or pureed, add 2 tablespoons
lemon or orange juice to each 4 cups. Pack
potatoes in freezer containers, leaving 1/2-inch
headspace. |

| To
Microwave: For best results, choose
sweet potatoes which do not vary in width
from center to ends. Pierce washed sweet potatoes.
Cook on high, turning each potato 1/2 turn
halfway through cooking time. |
